Yummy chocolate chip cookies – the chewy kind. Perfect for a lazy Sunday afternoon in front of the fire.

Ingredients
110g butter, room temperature
175g soft brown sugar
1 egg
200g plain flour
1 and a quarter teaspoons bicarbonate of soda
100g chocolate chips
Method
Lightly flour a couple of baking trays and set the oven to 170°C.
Cream the butter and sugar until pale and creamy.
Add the egg and mix until well combined.
Sieve the flour and bicarbonate of soda together and mix in to the sugar, butter and egg mixture.
When a smooth dough is formed mix in the chocolate chips.
Put small heaps of cookie dough on to the baking trays, making sure you space them well to allow for spreading while baking.
They will take around 10 minutes although the time will depend on how large or small you choose to make your cookies. They should be golden brown around the edges and flat.
Allow them to cool for a while on the tray before moving to a cooling rack.
Enjoy with a cup of tea, with friends and family, in front of the fire. Or if you’re in a hot climate, eat them with ice cream as a dessert; the choice is yours and the possibilities are endless!
