When I bake I tend to follow a basic recipe and adapt it here and there according to what I have or what I like. I have already posted a couple of banana loaf recipes but this time I wanted to make banana muffins. Instead of taking one of those recipes and putting the mixture into muffin cases I thought I would have a go at creating my own recipe.
Chocolate chips go perfectly with bananas (there’s not a lot that isn’t improved by chocolate!) and I thought if they weren’t brilliant at least the chocolate would save them from complete disaster.
And although this isn’t a groundbreaking new recipe I was pleased that I had managed to create a banana and chocolate muffin that tasted like it should. I am sure this recipe already exists somewhere out there as there are only so many variations on a theme and baking is a scientific process, but I’m claiming this one as my own!
Recipe
Ingredients
200g plain flour
1 teaspoon bicarbonate of soda
150g soft brown sugar
2 eggs
100g butter, melted
3 large or 4 medium bananas, mashed
100g chocolate chips
Method
Set the oven to 180ºC. Line a 12 hole muffin tin with cases.
Sieve the flour and bicarbonate of soda together and mix in the sugar. Add the eggs, melted butter and mashed bananas and mix. Add the chocolate chips and mix until well combined.
Put the mixture into the paper cases and bake for around 20 minutes or until springy to the touch. Leave to cool in the tin for a few minutes before turning out onto a cooling rack.
