Vegetable Box Cooking – Spinach Sauce for Pasta

Wholewheat Penne with Spinach Sauce

Finally a recipe using one of my vegetable box ingredients that is super quick and easy but also really tasty.

The chilli gives it a bit of a bite and the spinach doesn’t overpower the dish. I added chicken for a bit of extra protein but it would work just as well as a vegetarian dish.

It’s a very approximate dish and is easily adjusted for what you have and what you like. If you like lots of pine nuts, add more pine nuts; if you want a stronger spinach taste, use more spinach.

It is so easy to scale this sauce up or down according to how many you are serving. Here are the ingredients per person:

A tablespoon of olive oil

Half a chicken breast (if using)

A couple of generous handfuls of spinach

A handful of pine nuts

Chilli, chopped

A teaspoon of pesto (homemade is best if you have it!)

A tablespoon of crème fraîche

Salt and pepper

Parmesan shavings to serve

Method

Heat the oil in a saucepan and add the chopped and seasoned chicken, if using. Cook for a minute or two and then add the spinach. It will start to wilt in the heat and the steam. Once the chicken is almost cooked and the spinach is wilted, add the pinenuts, chilli, pesto and crème fraîche. Allow to warm through and finish cooking the chicken.

Cook your pasta according to the instructions, drain and stir in the sauce. Finish with parmesan shavings.

A great way to use up your spinach!
