Banana and Cranberry Bread

This is really a cake mixture baked in a bread tin that slices like a loaf. It is delicious with a cup of tea or coffee. All you need is a bowl, a set of scales and a loaf tin.

Recipe:

Ingredients

225g SR flour

100g butter

100g soft brown sugar

150g dried cranberries

2 eggs

2 tablespoons honey

3 ripe bananas

Method

Grease and line a loaf tin. Set the oven to 180°C.

Rub the butter into the flour. Add the soft brown sugar and the dried cranberries. Beat the eggs and mash the bananas with a fork. Add to the dry ingredients along with the honey. Mix well and pour into the tin.

Bake for about an hour, until the loaf is well browned and a skewer inserted into the centre comes out dry. Leave in the tin for about 5 minutes before turning out onto a cooling rack.

Ridiculously simple and absolutely delicious.
